|Spacious "nouveau Peruvian cuisine" restaurant (part of a local chain). Using a compact two-group La Spaziale at the bar, they use pre-ground Illy beans to produce an espresso with a thin, pale yellow-orange crema (it almost looks like a Creamsickle!). They serve it in Illy designer IPA cups at a rather cool, lukewarm temperature - not surprising since I've once caught their portafilter handles cooling in the drip tray. The resulting cup has little body, little robustness, and little flavor - mostly mild spice and barely any of the typical Illy wood. Served with white and brown sugar cubes, with grounds at the bottom of the cup.
