Single-group La Pavoni can sometimes run cool, but the attentive staff will voluntarily discard errant pours; they take their time out of simplicity and in wanting to do it right. And they'll talk you up a good conversation while you wait. Espresso has a mild, sweet smoky flavor, a sometimes-thick but more recently thin body (one of its inconsistencies), and a moderate amount of crema across the wide top. Has the potential to be inconsistent, but interacting with the staff will ensure you get it right. Milk-frothing is weaker (fairly large, inconsistent bubbles) and generous.
