|This Noe Valley institution of a restaurant still plugs along despite all the food and restaurant trends that surround it. It's a casual restaurant with a down-to-earth feel of exposed wood and subtle lighting. With a California menu to match. Using an old two-group Futurema in the back, the staff here exhibit deliberate barista skills - pre-heating cups, being meticulous about their tamping, etc. They pull shots of Ritual Coffee with a mottled, not terribly thick surface of lighter and darker brown crema. It has an earthy flavor, isn't overly bright, and its flavor sustains for a while. Not consistent yet, but significantly improved over the years.
