|Replacing the former Plumpjack restaurant, Chef Crenn packed her Michelin star up from Luce and started her personal, 40-seat restaurant here in early 2011. It's designed like a modern restaurant in Lisbon, and the food emphasizes small, potent tastes that might seem like an Atkins diet for the lack of carbohydrates. The service staff are a bit stiff. In the rear kitchen, they use a single-group BFC machine with beans from Sightglass (formerly from Roast Coffee Co.). They pull shots with a thin layer of medium brown crema. It can have whiter heat spots or be just thin and even. It's not an attractive espresso by any means, and the pour runs a little large. The flavor is somewhat flat - putting it in the territory of heavy drip coffee. With a thinner pour with the switch to Sightglass. The flavor is mostly mild herbs and spices: not at all what you'd expect from the brightness of Sightglass. Served in designer Guy Degrenne cups.
