|If you ever wondered whether the high-end food world gets coffee at all or not, this should be your answer. Located at the former Christian Brothers winery, the CIA at Greystone is a professional cooking campus where this restaurant is a sort of showpiece for students and educators. The campus is a large, castle-like space, and the on site restaurant is no less sizeable. There's an outdoor patio in front with many dining tables. Inside, there's a large open kitchen area with many more tables. To serve espresso, they use a two-group UNIC at the back of the service area. And with it, and Illy beans, they pull large shots with a thinning medium brown crema. The size of the shot ensures it has no better than a watered-down Illy flavor of mild spice and wood. Served in designer Illy logo IPA cups. The espresso here is literally a cop-out.
